Mincemeat Cake

Merry Christmas! Here in the UK an old tradition at this time of year is the Christmas cake. I’ve been told by some of my American friends that this is an unknown thing so I’d better describe it. Traditional Christmas cake is a dark, heavy fruit cake, usually seeped in brandy, and covered by marzipan and white icing. My husband loves it! It’s one of his favourite things about Christmas. Unfortunately I can’t stand it, and so he came up with an alternative that I’m going to share with you. It’s very simple and will keep well for several weeks, so even if you’re too full of other festive treats this is something that will wait for you.

Mincemeat Cake

4 oz butter, softened

4 oz soft brown sugar

3 large eggs, beaten

12 oz mincemeat (is a mixture of chopped dried fruit, distilled spirits and spices – you can find a recipe for making your own here – http://www.bbc.co.uk/food/recipes/mincemeat_2491 )

7 oz self-raising wholemeal flour

Milk to mix

Set oven to 325 F or Mark 3. Grease & line an 8 inch round cake tin. Cream together the butter and sugar in a bowl until light and fluffy. Beat in the eggs a little at a time then stir in the mincemeat. Fold in the flour and mix well, adding sufficient milk to make a dropping consistency. Put into the tin and bake for 10 minutes. Lower the oven to 300 F or Mark 2 and continue baking for 75 minutes until the cake is firm and a skewer comes out clean. Leave to cool in the tin for 15 minutes, then turn out onto a wire rack.
